Coca-Cola Chicken Recipe


Want to try something a little out of the ordinary for dinner tonight? How about Coca-Cola Chicken? It might sound weird to a lot of people in America, but Coca-Cola chicken is one of the comfort foods from my childhood home, Hong Kong. It is a special treat whenever my mom made it! Honestly, Coca-Cola chicken doesn't exactly taste like Coca-Cola, but it's sweet and savory and it is very, very, yummy. It is also very easy to make on a stove top or in a slow cooker.

Later I learned in my chemistry class that the sugars and flavoring chemicals in Coca-Cola makes an excellent meat tenderizer, which is why Coca-Cola chicken taste so good. That explains why the chicken always turns out so tender whenever I use this recipe! Try it with your family tonight! The recipe below is for a dozen wings, and you can scale up/down to make as much as you want (as long as your pot fits!).



Coca-Cola Chicken Recipe
Ingredients:
4 cups of Coca-Cola (or Pepsi or equivalent, make sure you buy regular and not diet)
1 cup of soy sauce
1 tablespoon of vegetable oil
1.5 lbs of chicken wings (about 12 wings)
salt
Fresh ginger slices (optional for spiciness)
1/2 cup of dry rice wine (optional for additional flavor)

Steps:
  1. Fill a pot with water and add a liberal pinch of salt, then bring to a broil on the stove.
  2. Place chicken wings into the pot and boil for 2 minutes, remove the wings from the pot and discard the liquids. (This step get rid of the funky taste of blood in chicken bones)
  3. Heat the pot with vegetable oil and (optional) ginger slices.
  4. Add the chicken, Coca-Cola, soy sauce and (optional) rice wine into the pot. Bring to a boil (If using a slow cooker, place all ingredients into the cooker and set to high for 2 hrs/ low for 4 hrs)
  5. Turn down the boil into a slow simmer for minimum of 25 minutes, turning the chicken as needed. (The longer you simmer the more favor the chicken will have, but usually about 25 minutes is good)
  6. Take the chicken out and enjoy! The sauce can be used as a gravy if wished as well.
